Pancakes Gone Asian

Pancakes or hotcakes are treats and comfort food, depending on how they are served. Sometimes you just want them with a dollop of butter and drizzle of honey; other times with ice cream or chocolate sauce. The next time you crave pancakes, add an Asian touch with coconut milk and palm sugar, or if durians are in season, make a durian topping. Recipes created by home economics[ST1]  teacher and cookbook author, Jo Marion Seow.

BASIC PANCAKES

1½ cups self-raising flour

2 tablespoons sugar

1 cup milk

3 tablespoons vegetable oil

3 egg whites

Method

  1. Sift the flour into a mixing bowl. Add sugar.
  2. Stir in the milk and oil with a whisk into a smooth batter.
  3. In a separate mixing bowl, whisk the egg whites to a stiff peak.
  4. Fold one-third of the whites into the batter
  5. Fold in the remaining egg whites.
  6. Oil a non-stick frying pan and heat it over medium heat.
  7. Drop a ladleful of batter into the pan. Cook till bubbles appear on the surface and the edges are set.
  8. Turn pancake onto the other side and cook for another 5 seconds. Transfer to a serving plate.

COCONUT PANCAKES WITH PALM SUGAR SYRUP

Make palm sugar (gula Melaka) syrup

100g palm sugar, chopped fine

4 tablespoons water

Make pancakes

1½ cups self-raising flour

2 tablespoons sugar

1 cup coconut milk

3 tablespoons vegetable oil

½ teaspoon salt

3 egg whites

Method

  1. Dissolve palm sugar in the water over a very low flame. Turn off the fire once the syrup starts to simmer and stir to dissolve all the palm sugar. Do not boil the syrup or it may develop a burnt taste.
  2. Pass the syrup through a fine sieve into a serving dish.
  3. Prepare the pancake batter as you would for basic pancakes.
  4. Serve pancakes with palm sugar sauce.
